Creamy Spinach Soup with Lime
Hello everyone! I have a new delicious recipe for you that will open you up to a different way of making creamed soups that are healthier, dairy free and down right delicious.
Today, I'm sharing my recipe for Creamy Spinach Soup with Lime with you. The creaminess comes from raw organic cashew that are cooked along with the rest of the ingredients and then pureed. This soup is dairy free, vegan, lower in fat and also low carb. For winter days you can serve hot and in the summer you can try serving chilled for a refreshing summer soup.

Creamy Spinach Soup with Lime
ingredients:
- 2 medium onions, rough chopped
- 6 garlic cloves, rough chopped
- 3 tablespoons olive oil
- 1 tsp ground white pepper
- 2 tsps kosher salt
- 1 cup unsalted raw cashews, whole
- 6 cups vegetable stock
- 1 12 oz package frozen spinach (unthawed)
- 2 limes (just the juice)
- More salt and pepper to taste
instructions:
How to cook Creamy Spinach Soup with Lime
- 1-In a 5 qt stock pot add onion, garlic, salt, pepper and olive oil and sauté on medium heat until onions and garlic are tender (Do not let get toasty)
- 2-Add cashews, frozen spinach and vegetable stock and ensure that all of the ingredients are submerged in the liquid.
- 3-Bring to a boil on high heat then reduce to low heat and simmer for 20 minutes
- 4-Remove from heat and let cool for 15 minutes.
- 5-Using a ladle, transfer In batches to a professional blender and puree the cooked mixture until creamy.
- 6-Add more salt and pepper as needed.
- 7-Add the juice of two full limes to the pureed soup and stir throughly. Add more if needed.
- 8-Serve in bowls with a dollop of optional plain Greek yogurt or lime wedge for garnish.
